1. Stir-fry
A stir-fry is one of the easiest dishes you can make on the road. Just grab some leftover veggies and meat (or other proteins such as tofu), chop them up and toss them in a skillet. Stir it around, add an Asian sauce – such as soy sauce – and your dinner is done!
You can prepare a simple but delicious stir-fry in under an hour. Also, you need minimal ingredients and cookware. Combine meat, fish or a meat substitute such as tofu with a bunch of veggies and some soy sauce for a basic stir-fry. Pair it with rice or noodles for a tasty & quick dinner.
2. Tacos
Tacos are amazing because they can be filled with almost anything! You can also do a lot of the preparation ahead of time. After a long day of travelling, you just heat up your ingredients & toss them in a taco for a quick and healthy dinner.
3. Buddha or hummus bowls
The amazing thing about buddha and hummus bowls is that you can almost fully prepare them ahead of time. Cook your quinoa or rice beforehand and prepare (or buy) some hummus. When it’s time to cook, you just have to chop some veggies, heat them up if you like and put them all together in a bowl.
4. Pizza
What’s greater than a fresh homemade (RV-made) pizza during your camping trip? You tell us! You can prep your dough and toppings ahead of time. All you have to do later is put the toppings on and prepare your pizza in the oven or on a grill. No grill available? You can also use a tortilla as a base and cook it in a frying pan.
